Recipe: Orange Cake With Brown Sugar Glaze

Today’s recipe is my own spin on a commonly made dessert in some Portuguese households, bolo de laranja, or simply, Orange Cake!
I’ll be the first to admit – my version is a simplified version of this traditional dessert with my own modifications, but I have made it for my family a few times now to positive reviews 🙂 The best part is that you only need a few ingredients that you probably already have on hand. So let’s get started!

Ingredients

For the cake
4 eggs
2 cups of all-purpose flour
1 cup of sugar
1 cup of orange juice
1 teaspoon of baking powder
1 teaspoon of vanilla extract
a dash of nutmeg

For the glaze
1/2 cup of brown sugar
1/4 cup of milk (you can also use a plant-based substitute)
1 teaspoon of vanilla

(optional: top with decorating sugar)

Begin by preheating your oven to 350 degrees Fahrenheit.
Separate your egg whites and yolks.
Beat the egg whites, once-beaten add in the sugar, and mix.
Add the egg yolks and vanilla extract to the mix and beat together.
Next, add the flour and orange juice and mix it all together.
Lastly, add the baking powder and nutmeg and mix.

For this recipe, I use a bundt pan which at this point I grease with butter and sprinkle with flour. Once the pan is ready, I add the cake mixture into the pan and put it into my preheated oven for about 40 minutes.
Once the cake is baked and cooled you can remove it from the pan and make the glaze.

For the glaze, simply combine the brown sugar, milk, and vanilla in a bowl and mix well. Then with a baking brush, brush the glaze onto the cake. Once glazed, you can slice your cake and enjoy it either on its own or paired with a cup of hot coffee!
